  1. Ponemos los dátiles en remojo en agua caliente durante 30'
  2. Precalentamos el horno a 160º
  3. Trituramos los ingredientes de la base hasta hacer una pasta pegajosa
  4. Ponemos un papel de horno en la base del molde, engrasamos el molde y añadimos los ingredientes de la base. Lo compactamos. Podéis hacer que suba un poco por las paredes para que quede más bonito. Reservamos en la nevera
  5. Para el relleno batimos a velocidad baja el requesón, el queso fresco batido, la vainilla y el eritritol. En Thermomix velocidad 2
  6. Añadimos los huevos uno a una y batimos suavemente hasta integrarlos
  7. Añadimos la mezcla al molde sobre la base y horneamos 1 hora, apagamos el horno y lo dejamos 20' más, abrimos la puerta del horno y lo dejamos 15 minutos
  8. Dejamos que atempere del todo y lo metemos mínimo 4 horas en la nevera. Yo lo hice el día anterior.
  9. Desmoldamos y decoramos con nuestra mermelada y los frutos rojos.
