  1. Limpiamos los calamares, tiramos de los tentáculos y sale todo, excepto el cartílago interior que tiene llamado pluma, ese hay que estirar para sacarlo ya que no sale con los tentáculo. Al calamar le estiramos de las aletas y al hacerlo ya nos llevamos la piel ya que se quita muy fácil. Les damos la vuelta, es decir la parte interior ahora será la de fuera y los lavamos bien bajo el grifo con agua. Así quedan:
  2. De los tentáculos que sacamos antes nos quedamos con lo que son solo los tentáculos, eso si en el centro apretamos un pelín y sale sola una bolita con el llamado pico. Lavamos al igual que los calamares.
  3. Ponemos en un cazo 2 huevos y los tentáculos con agua y cocemos.
  4. En el vaso de la thermomix, ponemos el pan rallado, perejil y ajo en polvo, 15 segundos a velocidad progresiva de 5 a 10. Reservamos.
  5. Al vaso el jamón, 20 segundos velocidad progresiva de 5 a 10. Reservamos.
  6. Seguimos con los tentáculos y los huevos cocidos, 5 segundos a velocidad 5.
  7. Añadimos el jamón, el pan, el resto de huevos sin cocer, sal y pimienta; 5 segundos a velocidad 4. Retiramos del vaso.
  8. Con esta masa rellenamos los calmares, no los relleneis demasiado ya que luego al cocinarlos si no revientan o se rajan...a mi se me fue la mano con uno, les ponemos un palillo para que no se salga el relleno; colocamos en el cestillo.
  9. Ponemos en el vaso la cebolla y los dientes de ajo, 4 segundos a velocidad 5.
  10. Incorporamos el aceite, 7 minutos, varoma a velocidad 1.
  11. Añadimos el agua, el vino, azafrán y la pastilla de caldo, colocamos el cestillo dentro del vaso y programamos 30 minutos, varoma a velocidad 2.
  12. Comentarios: Si os fijais en ningún momento hemos lavado el vaso.
